vegan burger with a sweet potato-coconut patty

Bei mir gab es nach einer langen Zeit mal wieder Burger und zwar dieses Mal mit einem Süßkartoffel-Kokos Patty. Um den Burger noch ein wenig aufzupeppen und zu liebe meiner Schwester, für die ich den Burger kreiert habe, habe ich noch Guacamole und ein Mango-Chutney gemacht.

Wer keine Lust auf einen Burger hat und lieber eine leichtere Variante bevorzugt, kann das Ganze natürlich auch ohne Brötchen und stattdessen mit etwas Salat genießen. 

Rezept für den Burger (2 Stück):

Patty

1/2 Süßkartoffel

25g Kokosnussmehl

Gewürze (Salz, Pfeffer, Chili, Paprika)

Guacamole

1/2-1 Avocado 

etwas Olivenöl (optional)

Zitronensaft 

Salz, Pfeffer

Mango Chutney

1/2-1 Mango 

etwas Olivenöl (optional)

ein Spritzer Zitronensaft 

Salz, Pfeffer

Sonstiges

Burger Brötchen 

Salatblätter

Gurke

Tomate 

Veganer Käse

Für den Patty die Süßkartoffel schälen, in kleine Stücke schneiden und anschließend weich kochen. Die Süßkartoffel pürieren und das Kokosnussmehl unterrühren. Mit Salz und Pfeffer abschmecken. Nun zwei gleichgroße Burgerpatties formen und diese für 35-45 Minuten bei 180 Grad Ober-/Unterhitze in den Ofen geben. 

In der Zwischenzeit die Guacamole und das Mango Chutney zubereiten. 

Dafür jeweils die Avocado bzw. die Mango pürieren und gebenenfalls etwas Olivenöl und Zitronensaft hinzugeben und beides mit Salz und Pfeffer abschmecken. 

Kurz bevor die Burgerpatties fertig sind eine Scheibe veganen Käse drauflegen. 

Die Burger-Brötchen mit etwas Salat, der Guacamole, dem Mango-Chutney und natürlich dem Burger-Patty belegen.

Dazu habe ich noch ein paar Karotten-Pommes mit dem übrig gebliebenen Mango-Chutney serviert.

Recipe for the vegan burger (serves 2):

patty

1/2 sweet potato (~200g)

25g coconut flour

spices (salt, pepper, chili and paprika powder)

avocado cream

1/2-1 avocado

some olive oil (optional)

a sprinkle of lemon juice

salt and pepper (+chili powder)

mango chutney

1 mango

some olive oil (optional)

a sprinkle of lemon juice (optional)

salt and pepper

vegan cheese

Peel the sweet potato and cut it into small pieces. Add them into a pot with some water and cook the potato cubes until they are soft. Transfer the sweet potato into a blender add the coconut flour and some spices and mix until it forms a dough. Form two burger patties and bake them in the ofen at 180 degrees for 35-45 minutes.

In the mean time you can prepare the avocado cream as well as the mango chutney. 

Cut both (avocado and mango) into small pieces and put them into separate bowls. Add some lemon juice and a little bit of olive oil (optional) and of course some spices. Mix everything until it gets creamy. 

A few minutes before the burger patties are ready add a slice of vegan cheese on each. 

Now it’s time to build your burger. Add some salad, the avocado cream, the mango chutney and the sweet potato patty.

I served the burgers with some carrot fries.
